Is Acid Wreaking Your Teeth? by Frederic Patenaude

There’s a threat to the health of your teeth that you may not recognize.

It’s called acidity.

Our saliva is naturally alkaline and prevents enamel erosion by supplying minerals to the teeth in between meals.

However, when the saliva becomes more acidic, more bacteria thrive and produce more acids, which eats away at our enamel.

But another more common threat is the onslaught of acid from the foods we eat.

A little acidity is good — our bodies can deal with it and restore alkaline balance after a meal. But when our enamel is already weak, and we start feeling the effects (sensitive teeth, cavities, etc.), we must give our teeth a break from all this acid!

Another problem is that we expose our teeth to acids more than ever before.

We drink healthy juices, or smoothies, which are often made with acidic fruits like apples, lemons or citrus.
We drink apple cider vinegar, hibiscus tea or lemon water.
We squeeze lime juice all over our food or use balsamic vinegar in an attempt to use less salt or improve flavor.
We drink wine, coffee, and other highly acidic beverages.
Acid is everywhere!

If you’ve been experiencing problems with your teeth, it may be time to give yourself a break from this acid onslaught.

It may be a chance to go on an acid-free diet! Not forever, but to give your teeth enough time to build back some enamel and get strong again.

Here are some foods to avoid during this “acid-free diet.”

Balsamic and all vinegar
Lemon, lime juice
Citrus
Many other fruits: berries, apples, mangoes, grapes, etc.
Coffee, wine
Pickles and fermented vegetables
Tomatoes and tomato products
Soda
I’m not saying that all of the acid-containing foods I just mentioned are unhealthy. Many are super healthy! But, when you want to rebuild your enamel, it’s essential to minimize or avoid these foods for a while.

Instead, you can eat all of the non-acidic foods, such as:

Nonacidic fruits: melons, papayas, bananas, dates, persimmons, etc.
Most vegetables (But beware: many become acidic when roasted).
Most foods you can think of that don’t taste acidic (whole grains, beans, avocados, etc.)
Acid Vs. Acid-Forming

It’s important to understand that a food item can be acidic (contain acids) but be alkaline-forming after digestion, while other food items can be alkaline or neutral, but become acidic after digestion. This is due to the mineral balance in the food and the presence of acid-forming amino acids. That is why most acidic fruits are alkaline-forming while most animal products are acid forming. Grains are slightly acid forming.

Of course, we’re talking about the contact of acid with your teeth, which is different. Ideally, you would want to eat a predominantly alkaline-forming diet that’s also low in acids.

The Acid-Free Diet Is Not Enough

The acid-free diet will help give your teeth a break and enable the rebuilding of enamel. However, you also need to ensure that you’re doing everything you can to turn actively around your dental health for the better.

The only way to prevent dental decay for life and reverse a bad situation is to take active control of your oral environment. Just eating less acid alone does not guarantee you’ll become cavity-proof.

How to “Survive” Air Travel by Frederic Patenaude

I travel maybe once a month on average by plane, so over the years I’ve come up with a few ways to stay healthier doing something that is often a source of stress for most people.

A few of my tips have nothing to do with food. When you travel, your primary concern is to avoid or reduce stress. Stress will take a huge toll on the body and add to the fatigue of traveling. If you’re crossing time-zones, you’re putting your body under even more stress.

So my goal when traveling by plane is to lower stress as much as possible. Every tip I will give you has something to do with that goal. If you make flying a pleasant experience, your digestion and overall health will improve.

1) Get a 9 a.m. flight if you can

This is a tip that I picked up years ago from an airline employee. During weekdays, 9 a.m. is the best time to fly. Why? All the rush hour is over. Business travel must arrive at their destination BY 9 or 10 a.m, so they take the 6 and 7 a.m. flights. By 9 a.m., the airport is empty. Any flight between 9 and 11 a.m will be during a time where the airport is practically empty. You will breeze through security and get to relax at the lounge much sooner!

2) Bring Snacks

I always bring healthy snacks with me on the plane and to the airport. Most people don’t realize they can bring fresh fruit and produce as long as they are “prepared,” even when fruit is otherwise forbidden. For example, you can’t leave Hawaii with a fresh pineapple, but you can cut up the pineapple in a fruit salad and bring that in a container.

Fresh fruit is king for flying. It’s truly the best food you can eat, along with water-rich vegetables like bell peppers, celery, and cucumbers (and yes, I realize that two of those vegetables are technically fruits, but give me a break! We do eat them like vegetables).

You don’t want to bring too much and then be burdened by excess weight. I typically bring the following:

Ginger chews (to avoid motion sickness). Available in health food stores.
A big bowl of fruit salad, with plastic utensils and napkins (don’t forget that part!)
2-3 healthy snack bars
A small bag of nuts or dried fruit, or both

3) Drink water

On the plane, drink plenty of water. However, don’t go crazy and drink so much that you have to constantly go to the bathroom. If you’re taking a night flight and you’re trying to get some rest, that can impair your ability to sleep.

There’s no set formula for how much you should drink, although some people suggest certain amounts by hours of flying. Essentially, you want to prevent dehydration. As long as your urine remains relatively clear and abundant, you’re doing a good job. If it gets very yellow, you’re becoming dehydrated.

4) Considering eating only fruit

If you have a flight that’s only a few hours long, consider eating only fruit during your entire travel time. Personally, my digestion always gets messed up when I travel by plane. It’s probably because of stress related to my fear of flying. But fruit is the one food I can handle no matter what. Fruit is also water-rich, which helps keep you hydrated. You can also consume celery, and other cut up water-rich vegetables (but not a big salad with avocados, nuts, and dressing!).

If you’re flying longer, you may get hungry and need to eat something more than fruit. In this case, stick with foods that are easy to digest. Personally, I can’t handle a big salad when I travel by plane. But nuts and seeds work well. And I only eat airplane food when I’m sitting in business class (see more tips about business class below).

5) Drink green tea

If you need a “pick me up” while flying, drink green tea instead of other caffeinated beverages. Green tea is full of antioxidants that will help your health while flying. Bring your own tea bags and ask for hot water. If you’re in business class, they can make green tea for you.

6) Use Light Therapy

I use a website called “Jet Lag Rooster” to create a plan to follow before or after arriving at my destination.

The plan essentially involves resetting the circadian cycles by exposing yourself to light. The website explains everything, and they also have an iPhone app.

You will need a few pieces of gear if you want this to work:
An inexpensive travel lightbox
Dark sunglasses or shades
A night mask
This program really works. I’ve used it a few times and then traveled again without it, and it was night and day! It’s sometimes not easy to follow because you have to wake up very early at inconvenient times to expose yourself to light, but if you can, try to do the program as explained on the website. It will save you from huge amounts of stress and unpleasantness on your next international or cross-country trip.

7) Fly in business class

There’s a reason why business travelers fly in business or first class when flying internationally. It’s simply a more restful experience! You can sleep on a fully reclined seat or “bed” and be treated to a royal experience.

However, business class seats are not cheap, especially internationally.

I personally always fly business class when going international, but I never pay for it. I use the system I teach in the course “How to Travel the World for Free.”

Conclusion

Finally, the trick to remaining healthy while traveling by plane is lowering stress. Sure, you can boost your immune system marginally by consuming supplements and superfoods, but none of those things will have as much of a powerful effect on your health as lowering stress will.

Whatever you do, try to make flying a pleasant experience, and enjoy your trip!

Gluten can be a hard thing to kick from your diet, read these quick tips to help you on your gluten-free journey!

More and more people these days are becoming intolerant to gluten, Celiacs, or simply avoiding gluten for their own dietary reasons. Gluten, however, can be a hard thing to kick, especially when you’ve been raised with having bread products with every meal.

Toast for breakfast – nope. Burger for lunch – no bun please. Garlic bread with your Italian dinner – so hard to resist. Believe us, we’re addicted to bagels and pizza just as much as the next person, so we can feel your pain.

As is usually the case when the consumer market changes so drastically as it has with gluten, the food producers have obliged with making progress in better and a greater variety of non-gluten products for everyone to enjoy.

There’s still a long way to go, but non-gluten products have at least come further than what they were when we were growing up – anyone else try rock-hard, flavorless, tiny sized gluten-free bread a decade ago?

Besides the greater presence of gluten-free products out there, there is a whole community now that supports the gluten-free diet. It can be overwhelming when you first cut out gluten, and now there are so many tips and articles to read to help you transition. There are a ton of foods out there that you may have never known had gluten in them until recently.

In an effort to help anyone who is currently gluten-free or who is looking to cut out more gluten from their diet, we wanted to put together a quick list of tips to follow to help avoid gluten without going crazy. We hope you get some use out of it!

Cook/bake your own food

The easiest way to avoid gluten is by cooking and baking your own food. You know exactly what is going into what you’re eating because you’re the one putting the ingredients into your food. If you’re extremely sensitive to gluten, this could be a good option to focus on.

And hey, you get to learn or improve on a new skill that makes new friends easily! And you get to show how yummy gluten-free food can be to your friends and family.

Bring snacks or toppings when going out to eat

Sometimes it can be hard eating out, especially if you’re a Celiac and you can get sick with even a trace of gluten.

To prevent this from happening, bring your own snacks and/or toppings when going out to eat. That way you won’t go hungry and you always have a back-up plan if you don’t see anything that would work for you to eat on the menu (or you don’t trust that there hasn’t been cross-contamination in the kitchen).

The same idea works for toppings – example: if you enjoy salads and love croutons – bring your own gluten-free version as a topping.

Check your medication

Check with your pharmacist about what is exactly in any medication you’re taking – surprisingly, a lot of medications contain the same protein that is in wheat, rye, and barley (as does a lot of mouthwash).

Gain a new perspective

Instead of moping around about the loss of enjoying your favorite wheat-based foods, celebrate the fact that this could be a wonderful new way to start implementing a healthier diet into your life.

Sure pizza may be a no-go for you now, but the fact that you can now eat healthy whole grains, like brown rice, corn, and quinoa will likely help improve your mood and your body will be strong and healthy. It only take a new perspective to change your thoughts about getting rid of gluten!

Be vigilant about reading labels

Even the products that you’ve used in the past can change their ingredients without notice, make sure to double check all ingredients on the packaged foods you buy at the grocery store to prevent doses of gluten from getting into your diet.

Popular packaged foods that usually include gluten can be pre-made broths, rice mixes, pasta sauces, and soy sauce, although there are many others out there too. Do your research, find trigger ingredient names that point to gluten (i.e. wheat, rye, barley, oats, spelt, Kamut®, etc), and avoid those. Easy peasy.

Use gluten-free substitutes

Bummed that you can no longer eat your favorite pasta dish or have donuts for breakfast? Chances are there is now a gluten-free version of those food items! Almost every food that traditionally has gluten in it, now has gluten-free alternatives.

Sure, they may not taste exactly like your favorite gluten food, but at least it’s something, right? And, similar to how much dairy-free and vegan food alternatives have progressed (vegan cheese anyone? yum!), gluten-free alternatives are only getting better in terms of their tastiness.

This goes for when you’re cooking/baking your own food as well – there are plenty of options these days for cooking with gluten-free ingredients, even for cakes and pastries!

Remember foods that are naturally gluten-free

And remember, you don’t have to find alternatives for everything, there are plenty of foods that are gluten-free friendly out there.

Fresh fruit and veggies, quinoa, teff, amaranth, polenta, buckwheat, corn, millet, and tapioca are all gluten-free, start using them as the base of your meals and get rid of the bread at every meal mindset.

Yes, some alcoholic drinks have gluten, too

Beer drinker? You may be sad to remember that beer is often times made from malted barley or wheat. There are more breweries these days that are offering at least one gluten-free beer to their customers, but there’s still a long way to go in the beer industry for the gluten intolerant.

If you don’t want to give up alcohol completely, there are plenty of alternative routes you can take while still avoiding gluten. These generally include cider, wine, sherry, spirits, port, and liqueurs.

I met Çagri Esmekya, General Manager of Elite Naturel http://www.elitenaturel.com on the last day of the Natural Products Expo West March 2015 in Anaheim, CA. I was on my way out of the Convention Center and noticed the bottles of juice at his booth and asked to take some. He was very generous to late me take quite a few bottles (of course, he did plan to take it back with him to NY and probably would have been donated). I agreed to do a product review on my blog of the juices and some are very unique. Even though I received the products in March 2015, it has taken some time to go through and taste all the products. I wanted to do one comprehensive post for all the products I have, instead of for each individual one. The main office for this company is in Turkey. They also have offices in NY, Germany and China.

All the products are sold in glass, I am happy to say, as I am not a “fan” of plastic, and are kosher (OU symbol), USDA certified organic, gluten-free, Non GMO Certified, not from concentrate (except for the watermelon juice) no added sugar, certified Fair Trade and have no additives, no colorings or preservatives. So you know, they are flash pasteurized. Once opened they must be refrigerated and consumed within 5 days. I also recommend when drinking fruit juices to swish some water in your mouth afterwards so the sugars do not stay on your teeth and prevent any tooth decay.

I am including pictures of the bottles for you to see. The labels are informative (although not always written in English, so do not understand all it says) and have nice pictures of the fruit, as well.

Update – 2/8/16: I have never looked at their website before and just did to see what their product line is like and if I could find more information about one of their juices and it seems that most of what I am reviewing here may/may not be available anymore, as it looks like the packaging has changed significantly, but in any event you are welcome to read my review and check out what they do offer on their website: http://www.elitenaturel.com

Here are my thoughts on the products in order of my tasting them:

1- I first one I tried has orchids on the label and not sure what other fruit is in it.
It comes in a 200 ml glass bottle and the words are all in French. It is called Orchidée. It had a very mild mellow satisfying flavor. I had it while out walking to quench my thirst and give me more nutrients then just drinking water.

2 – The second one I tried is called Pure Yumberry Juice. It comes in a 250 ml and 1 liter glass bottles. The small bottle I had is great for traveling and I had it while I was out for a walk. I have never tried a yumberry, so not sure what it is. This was produced in Turkey, so must be one of their berries and I am sure it is also high in antioxidants, especially with the rich red color of the juice. The juice was quite thick and creamy compared to the first one above and more like a smoothie. I liked the taste very much and the amount of sweetness was just right for me.

3 – The third one I tried is called Hibiscus. There is a lovely picture of a hibiscus flower on the label. It is a blend of pomegranate juice, water and hibiscus flavor. It comes in a 250 ml glass bottle (or at least that is the one I have from the company and perhaps it comes in other sizes). The pomegranate makes it high in antioxidants, which are very important in the body and the flavor has a hint of sweetness, but is a bit more tart because of it. For those who like sweet juice, this would not be one you’d choose as your first/favorite option. Regardless, it is quite good and perhaps an acquired taste/something you can get used to.

4 – The fourth one I tried is called Fruits du Verger in a 700 ml (23.7 fl oz) glass bottle. It is a combination of 5 fruits: orange, apple, pear, plum and banana. I was not sure how I would like it because I am not a fan of bananas (actually, they do not agree with me). They is 20% juice of each of the fruits listed. When I have the first drink of it, it tasted quite good and not overly sweet. It was smooth and mellow. The banana did not stand out for me, as far as flavor, I tasted more the pear and plum. I ended up drinking the entire bottle at once because I did not eat that much and usually consume more fresh fruit during the day. It was satisfying and filling, too.

5 – The fifth one I tried is called Réveil GOURMAND in a 700 ml glass bottle. It is a combination of 6 fruits: banana, orange, pear, apple, apricot and peach. There is 20% juice of the banana and orange and the rest is 15% each. Even though there is more banana, I did not taste it, but what stood out for me from the first sip was the apricot, which I like very much. The blend of flavors was excellent and having not consumed enough of my regular fruit consumption on the day I tried it, I finished the bottle without putting it in the fridge. I like it better room temperature because too cold is too shocking to the body. So far, this is my favorite one!

6 – The sixth one I tried is called Matin Calin in a 700 ml glass bottle. It is a combination of 7 fruits: banana 10%, peach, apricot, orange, pear, strawberry and apple – 15% of each of them. It had a smooth creamy flavor and the apricot stood out most for me when I first drank it. This one has the addition of strawberry to it, which ai liked, but otherwise has the same of the rest of the fruits as #5 above. Banana, is not a fruit I consume, but when mixed in with the other fruits, I do not taste it. Again, I drank most of it at room temperature, which I prefer, but not sure if chilling it beforehand would give it a different taste.

7- The seventh one I tried is called Jasmin in a 700 ml/23.7 fl oz glass bottle. This is one of my favorite, as the flavor is light and satisfying. It is mildy sweet from the melon juice, but not overpowering. The juice is pressed with the seeds and jasmin flavor is added, although I do not know what jasmin is supposed to taste like; I am tasting the melon.

8- The eighth one I tried is called Watermelon Juice from concentrate in a narrow tall 50 cl/500 ml/16.9 oz glass bottle. From just looking at it, has a very deep red color, more like a grape juice type drink. The label does not list any ingredients, I would gather, because all it is, is watermelon. I opened up the bottle and smelled it first, and has a sweet fruity smell. I poured a couple of ounces into a glass, and seems much thicker then the other juices I tried from this company. When I drank it, was super sweet and also too much so, to drink as is. I had a few sips of water afterwards, but next time will dilute it some, to tone down the “super” sweetness, even too much for me and more like a syrup. On the second time around trying this, I diluted it with half water, but could do even more and still tasted the sweetness, but not as overpowering to the palate. I prefer drinking it this way.

9- The ninth and final one I tried is called Tomato Juice with Aegean Herbs in a small 20 cl/250 ml/~8 oz glass bottle. I looked up Aegean online and that is a region in Turkey. This is a nice savory drink, if you are looking for something different and a change of pace from always having a sweet juice. There is no detailed ingredients listed on the label and looked on their website, but did not even find the product listed It had an Italian flavor to me, although I could not see any of the herbs in the bottle. I actually decided to pour some on my salad, as a dressing and was very good.

Coconut Secret – Low Glycemic Coconut Products

The company, Coconut Secret, has “tapped” into a way to create great products made from the sap of coconut that are natural alternatives to traditional products on the market. To me, they are above board then even some of the “natural” products you see in health food stores and supermarkets. Some, of course, are better then others and some, I see as being worse for you then eating dirt or grass from your yard. So, “all products are not created equal,” in my humble opinion.

The owners, Leslie and Randy, found a personal need for their family and decided to create their own products because there were none on the market that met their expectations. As the saying goes, “necessity is the mother of invention.” They took this opportunity and ran with it and I am happy that these products came about because they are not only good for you, but they also taste good! You can forget about your traditional soy sauces, vinegars, honey and sugars because these products from Coconut Secret, in my opinion, will eliminate the conventional unhealthy ones from your pantry.

Coconut Secret does everything right and never cut corners in making their products. Most products (except for some of their chocolate bars that have dairy and not 100% organic) are 100% Organic, Vegan, Gluten-Free, Non-GMO, Kosher and no MSG in their soy-free seasoning sauce.

The benefits of using the sap of the coconut blossoms is that it’s very low glycemic in and of itself and also rich in vitamin C, B vitamins, minerals, amino acids and close to a neutral pH.

Another thing I am very pleased that the company opted to do when making their products, is to use glass bottles and not plastic. We all know that plastic, even the supposed non-toxic ones that are called BPA-free, likely still have some chemical components that may leach into the product. I have never personally had a BPA-free container tested for what it is made of in a lab, but it would be interesting to know that. Perhaps that can be researched further by “googling” it. I am not a “fan” of using plastics at all. I do understand that not all products can be packed in glass for various reasons, including cost, safety, etc. To me glass is the best option for a number of reasons: 1- no leaching of chemicals into food from plastic and the fact that it’s sitting in the plastic for who knows how long while it is sitting on the shelf in the store, 2- you can reuse the glass bottles or jars for many different purposes: food, gifting something to others, using as your water bottle and if nothing else, recycle it, 3- my opinion is that they have a better shelf-life, as well, 4- the food in the glass is much healthier for you, because why would/how could you want to make an organic product and then house them in plastic? To me, that is similar to buying fresh, healthy, ripe and organic produce and then washing it with chemically-laden tap water. Another example would be someone who was told they needs to exercise for health, so they decide to ride a bicycle, but smoke a cigarette while doing so. I think you get the message. Glass is best! I would go so far as to say, I never buy “plastic” water, because even if it is pure water, it has still been living in plastic for who knows how long and chemicals have been leaching into it. My tip to you: when traveling by plane and you can not take a glass or stainless water bottle, do not buy plastic water. The best bet, is to take produce that is rich in structured water that will hydrate you and also provide you with other beneficial vitamins and minerals. Some suggestions: apples, oranges, grapefruit, grapes, kiwis, melons, peaches, plums, nectarines, pears, celery, cherry tomatoes and cucumbers.

Also, their products has simple easy to read and understand ingredients that you do not need a degree in chemistry or the like to understand. The 3 coconut products I discuss here, are actually only made of one ingredient, that being coconut sap from the coconut blossoms (except for the coconut aminos that adds sea salt).

The 3 products I review here are:
Raw Coconut Vinegar, Raw Coconut Nectar and Coconut Aminos.

1) Raw Coconut Vinegar: This product is by far better tasting then any vinegar I have had in the past, including apple cider, umeboshi plum and rice vinegar. It smells exactly like traditional apple cider vinegar, in my opinion, and has higher nutritional value then similar products in its amino acid, vitamin and mineral content.

It also has the added benefit of being a great source of FOS – fructooligosaccharides – which is a prebiotic that feeds/promotes the growth of “good” intestinal bacteria, which are in fruits and vegetables, including, apples, pears, garlic, onion and asparagus (which differs from a probiotic, which is the “good”/beneficial gut bacteria that aids in intestinal/digestive health, such as found in foods like sauerkraut, miso, kefir, kimchi and kombucha). So, it taste yummy plus you improve your digestion – what a great concept! You can sprinkle it on your salad, add it to dressings, marinades, to season rice for sushi, in spreads, sauces and patés. It can also be used for cleansing internally, as well as skincare.

The reason it is called “raw,” is because it’s processed without any heat and therefore, is also rich in enzymes. It is made in small batches, which means it is fresher and they have more control over the results. This vinegar is naturally aged for 8 months to 1 year to give it the distinct flavor, which does not taste coconutty at all! It also does not need any refrigeration.

2) Raw Coconut Nectar: This is one of the best alternatives to sweeteners on the market today. If you want a product that pours like honey, is as sweet as any other sweetener, can be used in all your desserts, does not need refrigeration, and is safe for diabetics, has a low glycemic index, then this is the product you ought to buy and use regularly!

There are so many products on the market today if you have a “sweet tooth,” and the majority are made with unnatural, chemically processed ingredients, colored with carcinogenic dyes and then use products like aspartame, splenda, nutrasweet – which are actually all the same thing and produced by Monsanto. If you are not aware of them, they produce r-BGH [bovine growth hormone] milk, and GMO [genetically modified organisms] foods which have already proven to not help with the hunger issue in the world and also cause the plants to need to be sprayed with more pesticides, herbicides, etc. The yield are usually lower and animal fed GMO feed have developed all kinds of problems/illnesses/diseases and when they are fed non-GMO feed the problems all go away. If you would like to do your own experiment to see what happens, take an organic corn on the cob and conventionally grown corn on the cob [which is more likely then not to be GMO] and put them both outside and put a popsicle stick in the ground next to each one and write organic and conventional to distinguish the two of them. Then see which one gets mostly eaten by the birds and creatures. This will tell you a lot! Besides the fact, that if the companies decide to inject something into the seed that you may be deathly allergic to, such as peanut, soy, etc, you will never know.

Now you know why to stay away from the chemical products on the market, but even the supposed “natural” sweeteners may not be good for hypoglycemic and diabetic people, of which their is a very large population of the world in these categories, including very young children.

Their have been an influx of products using agave nectar, especially with raw food snack products, which are better for you, but adding agave changes that and it is tauted as being a better/healthier alternative. Most people do not know that it is actually worse or on par with HFCS (high fructose corn syrup) which causes numerous health problems. I will have an article on my blog coming up in the future that discusses this subject. So you know, it is not raw, is highly processed and high glycemic, which is not good for anyone, even if you do not have any issues with your pancreas, but over time, it could lead to it. I was even surprised that a company I know who bottles the best raw organic coconut water, in my opinion, are using agave as a sweetener in their raw tea! They already have access to the coconuts, so why aren’t they using the coconut nectar from the blossoms or contacting Coconut Secret to use their nectar? I hope to get in touch with the company soon, so this can be remedied!

3) Coconut Aminos: Are you still using Kikkoman, Braggs or any of the other soy sauces on the market? So you know, most soy is GMO (as explained above) and even with the ones that say organic, there is still the issue of cross-contamination if it was planted in a field where there are other gluten crops growing or grown in soil that was previously used to grow gluten crops (i.e. wheat, barley, rye, spelt, kamut, etc). This is an issue, especially for those who have gluten sensitivities/intolerance or celiac disease, but even for though of us who are staying away from gluten, as a preventative measure, because gluten, can reck havoc on the body, which specifically begins in the colon (where the health of the body begins) and cause numerous health problems. Think of the word gluten – sounds like glue and who wants something in their body that acts like glue, I don’t! That is why this is the perfect alternative to soy sauce and has a similar flavor without the soy. You can use it on your salads, in stews, dressings, sauces, bean dishes, etc.

In closing, I hope that all markets/stores, in time will only carry products such as sold by Coconut Secret. A lot of companies can learn from them (and I wish they would) as to how to make great products for health and not compromise or “cave in” to cut corners based on their own selfish needs or being pressured by governmental “hounds” as opposed to the concerns and long term benefits to the people and the planet. Q and A Series: People, Products and the Health of Our Planet – Interview with Sequoia Cheney, CEO of Wonderfully Raw

For the fourteenth interview, I have the pleasure of introducing you to Sequoia Cheney, CEO of Wonderfully Raw – makers of Coco-Roons, Brussel Bytes and Snip Chips

Even though Sequoia was unable to answer the questions I sent her, she provided me with a great article that tells her story.

I find myself sitting here thinking about how grateful I am to be where I am right at this moment. I feel grounded, strong, healthy, vibrant and full of energy. I have to thank creator for making me choose health.

That has not always been the case. I was starting to believe that my days of being cute and attractive were over. I convinced myself that I had to accept being over weight, tired and old. That was what the rest of my life would look like. I was a grandmother and old people just don’t feel that good.

I was diagnosed with Type II Diabetes about five years ago.

I think I was in shock and really didn’t understand how serious diabetes could be for the rest of my life. I did not even know what it really meant to be diabetic. I went through the diabetes education programs that my medical doctor recommended. I took my medication. I started to follow the dietary recommendations and realized that following these guidelines was not the answer. I was fooling my body and myself thinking I could eat just like everyone else, with a lot of packaged, preserved foods with lots of artificial sweeteners. This was not helping me cure my diabetes and or get to the core problem in my body. I decided to do my own research and started my own healing journey through diet and exercise and a spiritual practice. It has taken me five years of hard work, perseverance, and commitment, and many tears to heal myself.

As I said I started with the recommendations from the Diabetes Association of America. I also knew that loosing weight would also help tremendously with my blood sugar. I knew weight loss was essential. So I looked into and tried every single diet out there, the biggest looser, weight watchers, high protein, low fat, counting calories, carbs and fats. AM PM Fat loss program and I even went to a medical doctor for weight loss, gave me pills, shots and B12. None of those programs worked for me until I decided to carefully watch what I ate, exercised 3/4 times a week and checked my blood sugar before and after every meal to see how each food reacted in my body. Finally after many years I reached a good eating program that I was able to stop taking all my medication. I was eating very simply. Lots of Vegetables, Salad, 3 to 4 oz protein. The only grains I ate were Millet and Quinoa. Some beans, Good Fat olive oil, avocado, nuts. Special Bread from Julian Bakery “Mana Bread”. I did really well on this diet,I had lost a bunch of weight but I hit a plateau and I just was not losing even though I was eating perfectly and exercising. I just wanted to die, and I did shed a lot of tears. I couldn’t understand why my body was not responding. My husband Jack looked fabulous, was thin and doing exactly what I was even in larger amounts. Again I thought, well Sequoia you are just going to have to accept your body just the way it is…………. But I knew in my heart there was a way for me!

Well, Creator had a plan for me. I just love how he works in such mysterious ways. Before I knew it I was enrolled in a Raw Foods Chef program at the renowned “Living Light Culinary Institute” in Fort Bragg, California. A month prior I never imagined I would be a Chef, let alone a Raw Foods Chef. Although I have always loved to cook. I love to eat good food. I can not stick with anything if it does not taste good. Well, lo and behold I went to Ft. Bragg leaving my life behind to start this journey! Oh my god, it has been an answer to my prayers. My blood sugar is completely normal, and still without any medications.

I have learned to make the most wonderfully raw food. I never thought I would be eating lasagna, pizza,pasta,enchiladas, pies, cakes, soups, salads, quiche and so much more. I still can not believe what I am eating. I can literally feel the energy of the food. You feel healthy and full of energy. You will not be as tired because your body won’t have to use all your energy to digest the food you eat.

When we think of raw foods as I said before. We think of carrots, celery. The actual meaning of Raw means in its natural state. So the food we are putting into our bodies when raw means they are still alive, filled with enzymes and nutrients. This food supports every aspect of our physical body.

Sometimes it is really scary to make changes to ones habits I know!. So if you have a feeling that eating this way would be good for you. Good for your physical health, mental health and spiritual health. Start off in baby steps.

If you just do a few simple things like:

Have a smoothie in the morning
Have a green drink
Have a green salad before each meal

Just by doing those simple things you will be eating 50% RAW. I am so passionate about “Wonderfully Raw” foods that I can not wait to share what I have learned with you.

I am now a graduate of the “Living Light Culinary Institute Gourmet Chef/Teachers Program” and Jack is a certified teacher of ” The Science of Raw Foods” we will be offering a series of talks and un-cooking classes at Three Trees Retreat in Watsonville, CA.
