Why Stone Ground?
We’ve all witnessed the browning of an apple. When the fruit is cut or bruised browning occurs because living cells are damaged and begin to oxidize. Now imagine the process used during the production of a typical nut butter – mastication with heavy duty metal blades. This process literally shreds, tears and cuts repeatedly until the desired texture is achieved. Any living enzymes, viable nutrients, and ‘life’ would certainly dwindle.

RAW and LIVING are principles we at Dastony are truly passionate about. Like with anything living, the energy and vital compounds found in nuts and seeds are very delicate. Our method of stone grinding is the best way to preserve and cherish this life force. Large, flawless granite wheels slowly turn ‘grinding’ the food until it is silky smooth. My Review:

I have found some great products to review, simply from doing a search on Amazon. Before I decide if I even will consider the product, I read the reviews on Amazon and then search on the company site to see that it complies with my own personal high standards for myself, as well as for the public who are reading my posts and also watching my videos. Instead of buying the product, I contacted the company to see if they are willing to send me product(s) for an unbiased review. I want to thank Anna for her willingness to send me a few of the great nut and seed butters that Dastony sells.

I was so anxious to try out the butters and could not wait till the package arrived at my door. It was well worth the wait and then some. I do not think that I will ever want to eat any other nut or seed butters ever again! Once you taste the best artisan-made products (regardless of the cost), it is very difficult to eat another brand. It is the same as if you are a farmer or work at a farmers market (I do work for an organic produce farmer who has the highest quality, tastiest and unique greens and other produce – if you are interested in knowing more about him and if you live in San Diego, you can buy his produce at various markets or through his CSA – go to http://www.sagemountainfarm.com) and eat the freshest food, it is not the same to “buy” your produce, even at a health food store. Dastony uses an “old world” method for processing and offer unique products to their customers. It is worth every penny you will spend to buy them! I was also happy to find out from Anna that the facility handles only their raw tree nuts and seeds and does not process soy or dairy. Also the nuts and seeds are truly raw, as they source out the best products, especially now that raw almonds that are grown in USA are pasteurized.

I received two of their 8 oz butters: Sprouted Pumpkin Seed and Sprouted Sunflower Seed Butter (plastic containers are never used, all of the products come in glass jars). They also offer Sprouted Almond and Sprouted Sesame Seed Butter (Tahini). The difference with sprouted nuts and seeds, it that the germination allows it to be digested more easily in your body and it is considered “living food.” In order to do this, the seeds/nuts are first soaked, at least overnight and they allowed to germinate or even begin to sprout, where you see a “shoot” coming out of one end of the seed/nut. Afterwards, the seeds/nuts are dehydrated at low temperature below 118 degrees to remain raw and enzyme-rich.

The process that Dastony uses to make the butters is explained above and called “stone-ground” and was used in ancient times to make olive oil. It creates the smoothest, creamiest nut and seed butters I have ever tasted. The flavor is like nothing I have ever had before and I am sure if I did a side-by-side taste test with other companies who make nut and seed butters, they would not “hold a candle” to these products! Of course, not many are using this “old world” process as they do not want to take the time or make the effort to offer the best product to the public. They simply want the “machine” to crank out more products, so they can make more money and then, as the expression goes, “you get what you pay for.” This holds true, for sure with Dastony! The prices they charge for what you get is really “cheap” relative to the quality. I ask, please, Dastony, do not mark up the price because I think it is too low, because you still want it to be relatively affordable to the consumers and I do not want to get negative comments from people who say it is my fault that the price went up.

The other products I received (not sprouted) are a 1 oz sample jar of: Almond Butter, Cashew Butter and Coconut Butter. The cashew and coconut butters are also certified kosher by Earth Kosher. They do not sell this size to the public, but are offered in 8 and 16 oz sizes. Besides the varieties I sampled, they also offer:
Brazil Nut, Hempseed, Sesame Seed (Tahini) and Hazelnut Butters. Each butter has its own unique flavor profile, and the 3 mentioned here, to me, have a sweeter flavor and I really enjoy using them to spread on a cracker, add to a soup, smoothie, to make a nut/seed milk, sauce, dressing, dessert, etc. They are such versatile products. The possibilities are endless and is as infinite as the mind can think of! I also like to dip my yummy tri-color carrots or celery into the nut/seed butters. Sone like to split a date in half and spread some butters in there. Please note that double-dipping is not recommended and here is why: Our mouths are the dirtiest places around and if the mix of germs and bacteria present in our mouth get into a jar it can cause mold and rot. This holds true with any food in your fridge!

I know that in the future, I will be purchasing my nut and seed butters from Dastony and enjoying the love and care that goes into each of their products.

Three Week Update to My 100 Day Experiment

My Three Week Update

May 21, 2014

I have now been using xylitol daily for 3 weeks. On the first day, when I ingested it and till today, it tastes sweet to the tongue and once it dissolves immediately. I consume some after I eat a meal/snack and also after I brush my teeth for the benefit of preventing cavities. I do not know if my teeth are healthier (according to dental standards because I have not gone for any dental visits recently and will not be going for at least 3 more months or so). I see my teeth as looking better and when I wake up my mouth feels fresh and clean. That is what I can say from my perspective. I have a new picture below of my teeth for you to decide for yourself compared to one of the previous picture. I will put a photo from 3 weeks ago, as a comparison.

I will continue to use the xylitol daily and will update again soon!

Q and A Series: People, Products and the Health of Our Planet – Interview with Ellery West, CEO of Organic Essence: USDA Certified Organic Body Care Products

For the eleventh interview, I have the pleasure of introducing you to Ellery West CEO of Organic Essence: USDA Certified Organic Body Care Products.

My comment: I met Ellery at the Natural Product Expo in Anaheim, CA when the company was in its infancy and their were still packaging in plastic. The products were always certified organic and of the highest quality. Now they have “stepped it up” in their environmental stewardship and have created the zero waste packaging, made of home compostable packaging that is non-toxic and no plastic leaching from the plastic package into the products and then onto your skin.

Here is what Ellery told me about the new paper packaging: Gail West (VP Creative) and I invented the paper jar in 2008, the lip balm tube followed a few months later.

Question #1: Tell me briefly about yourself and why you decided to get involved in the “health” industry?

I like cooking and making body care products, is a similar process. Until the beginning of the 20th century, the skin was thought to be completely inert and impermeable to chemicals that might otherwise enter the body, however we now know many chemicals can get through the skin.

Question #2: If you were stranded on a desert island and were allowed to take only 5 items with you (they can be food, books or specific products that are all health-related), what would they be and why?

Water purifier, bar soap, knife, functioning satellite phone and a desert island food finding handbook since starving before rescue would bad for your health.

Question #3: What one message do you want to share with the people of this world that is crucial for their ultimate well-being and longevity?

Overpopulation; fewer feet make for a lighter footprint. Immediately we need to become more conscious of our heedless spread of synthetic chemicals, into, onto our bodies and throughout the environment.

Questions #4: If someone could afford to purchase only one product at this moment to start their journey towards better health (food or health-related), what would you recommend and why?

Old fashioned, natural bar soap that has been made without synthetic fragrances and colorants would make a good start because the amount of exposure we get from washing our hands with detergent ‘soaps’. Don’t use hair dyes, fingernail polish and nano-particle titanium and zinc oxide sun blocks.

Question #5: Tell me more about your business/company and/or products you offer to the public to help them achieve optimal health and well-being?

Using leave-on-the-skin products that contain synthetic chemicals isn’t acceptable for people who have taken responsibility of their own, and their family’s health. Our mission is to produce organically certified body care products that lack synthetic chemicals and to make them available in packages that don’t contaminate the product with synthetic chemicals that leach from their plastic packaging.

Question #6:What are your hopes/aspirations/dreams for the future health of the people and the planet?

I hope that as a species we can properly account for the indirect, environmental costs for our way of life. We don’t want to steal from other people via the environment and through time. I also dream that we as a people become fully conscious of the potential harm we pass on to our progeny via our own synthetic chemical exposure.

Question #7: Who is your greatest hero and why?

Rachael Carson, since waking people up to the environment is hero-worthy.

My comment: I found this company when I read about a new product that was being carried at the OB People’s Co-op in San Diego, Ca. I liked what I read, so I decided to look up the company online and read more about the products they make. I then sent a email and Willow was gracious enough to send me a few of the products, including a couple of the sauerkruats, kimchi and pickled vegetables. Just to let you know, they are so good and the unique flavor profiles make them pleasing to the palate.

Question #1: Tell me briefly about yourself and why you decided to get involved in the “health” industry?

I have always loved nutrition and health and when I got into fermentation it seemed like a wonderful thing to share with the world at large.

Question #2: If you were stranded on a desert island and were allowed to take only 5 items with you (they can be food, books or specific products that are all health-related), what would they be and why?

Wow, that is tough. Some poetry- maybe Neruda or TS Eliot, Sunglasses, water, a machete (in hopes that I could find coconuts, mangos and avocados) and some kim chi.

Question #3: What one message do you want to share with the people of this world that is crucial for their ultimate well being and longevity?
So much of vibrant health comes from within. Of course it is important to eat life giving food, drink lots of water and get good exercise but I have met many amazing soul that radiate health just by letting their hearts shine and by being willing to be open and vulnerable to the world.

Questions #4: If someone could afford to purchase only one product at this moment to start their journey towards better health (food or health-related), what would you recommend and why?

I know I am partial, but I think fermented foods and drinks are huge addition to any diet. They balance ph, boost immunity, help regulate hormones, sleep, moods and they taste great!

Question #5: Tell me more about your business/company and/or products you offer to the public to help them achieve optimal health and well-being?

We make 7 flavors of live, raw, vegan, organic kraut and kim chi. These products are easy to add to salads, sandwiches, rice dishes, noodles, dumplings, soups, burritos- you name it. We are sold in the Rocky Mountain region, Northern and Southern California and the Midwest.

Question #6: What are your hopes/aspirations/dreams for the future health of the people and the planet?

It is my hope that we learn to enjoy foods that are better for the planet. Eating more plants and grains and allowing the balance to return to ecosystems that have been de-forested, over grazed or otherwise overused. I just finished reading “Diet for a Hot Planet” very intense and inspiring. Simple, clean, food- less packaging, less damage done.

Question #7: Who is your greatest hero and why?

I have to choose one? My Grandmother who has done yoga for 50 years is a heroine of mine. She was eating healthy, stretching, doing breath exercises and practicing the power of positive thinking before it was cool. She is 96 and such a bright light in my life.
